Spaghetti Carbonara is the most famous traditional Italian pasta in the world. Carbonara is a delicate cheese and egg sauce enveloping the pasta, mixed with juicy, fried bacon. It’s all sprinkled with parmesan cheese and ground black pepper. Mmmm, così delizioso…

Also pasta alla carbonara is traditional for the Italian region of Lazio, of which Rome is the capital.

Traditionally, spaghetti with carbonara sauce is made of five basic ingredients: spaghetti, eggs, cheese, peppers and guaccale (guanciale, Italian) – uncooked pork cheeks, which in those days were used instead of bacon. Since bacon is now much easier to find than pork cheeks, most chefs use it, which does not make the dish any less flavorful.

To make pasta carbonara sauce, you need to cut 100 grams of bacon into small cubes and fry on high heat until crispy.
